Gold Coins (GC) are entertainment-only. You can buy them, win more of them, and play as long as you want, but they have no cash-out path. WOW Vegas calls its fun currency WOW Coins; other brands stick with Gold Coins or a house name.

Can you convert Gold Coins into Sweeps Coins?

Almost never with a direct exchange. Regulatory framing is the reason: if GC freely became SC, the purchase of GC would look a lot more like buying the prize currency.
